dc.description.abstract	The objective of this study is describe and analyze the work as well as their conditions of realization in a poultry slaughtering. In recent years some studies that addressed the work in poultry slaughtering especially in the southern region of the country, atented specifically at the worker's health, showed us that was necessary to examine in a wide way the work and also Agroindustrial Chain for Beef Production in Brazil. With this aim, in this study was used as a methodology semi-structured interviews with employees of the poultry slaughtering: totaly ten workers who were allocated in different sectors of the production line were interviewed. This dissertation consists of four chapters. In the first chapter we sought to introduce the reader to the topic researched, as well as reporte the process to this research. The second chapter has focused on the macro analysis of Agroindustrial Chain for Beef Production in Brazil, reflecting about the production of the meat as a constitutive part of Agribusiness commodity production. In this chapter we also characterize the work in the Brazilian's slaughterhouses. The third chapter deals with the analysis of the work in the capitalist system of production, as well as their ways of management and production control. In this we characterize the work in the pultry slaugtering in general under the optical of Taylorism and Fordism production. The results of such research are presented in the fourth chapter of the dissertation, in it we analyse the subjects and the learning processes at work, also the conditions, rythim (pace) and intensity of production in the poultry slaughtering, as well as we describe the production according to the account of respondents. The results of the researcher indicate that the work in poultry slaughtering is marked by the degradation of physical and metal workers's health, who perform it on extensive journeys of daily work, strong pressure and management control, cadenced by the rhythm of the machines.	pt_BR
dc.description.resumo	O objetivo desta pesquisa é descrever e analisar o trabalho, como também as suas condições de realização, em um frigorífico de aves. Nos últimos anos, alguns estudos que abordaram o trabalho em frigoríficos, especialmente na região Sul do país, voltados mais especificamente para a questão da saúde do trabalhador, mostraram que se fazia necessária a produção de uma pesquisa que analisasse de maneira ampla o trabalho e a Cadeia Agroindustrial de Produção da Carne no Brasil. Com esse intuito, no presente estudo, utilizou-se como metodologia a entrevista semiestruturada com trabalhadores de um frigorífico de aves: ao todo, foram entrevistados 10 trabalhadores, que estavam alocados em diferentes setores da linha de produção do frigorifico. Esta dissertação é composta por 4 capítulos. No primeiro, buscou-se introduzir o leitor no tema pesquisado, como também relatar o caminho percorrido na construção da pesquisa. No segundo capítulo, focalizou-se a análise macro da Cadeia Agroindustrial da Produção da Carne no Brasil, com reflexão sobre a produção da carne como parte constitutiva da produção de mercadorias do agronegócio. Nesse capítulo, também foi caracterizado o trabalho nos frigoríficos brasileiros. O terceiro capítulo refere-se à análise do trabalho no sistema capitalista de produção, como também das suas formas de gerência e controle da produção. O trabalho nos frigoríficos é caracterizado em generalidade sob as óticas taylorista e fordista de produção. Os resultados desta pesquisa são apresentados no quarto capítulo da dissertação, com relatos dos sujeitos abordados na pesquisa e sobre os processos de aprendizado no trabalho, as condições, o ritmo e a intensidade da produção no frigoríficos, como também a descrição da linha de produção do frigorífico segundo os entrevistados. Os resultados da pesquisa apontam que o trabalho no frigorífico de aves é marcado pela degradação da saúde física e metal dos trabalhadores, que o executam em jornadas exaustivas de trabalho diário, sob forte pressão e controle da gerência, cadenciados pelo ritmo das máquinas.	pt_BR
