dc.description.abstract | The use of food dyes in the industry has disseminated in the last decades. Its use has several objectives, from an improvement in the appearance of processed foods, to change the expiration date thereof. Unfortunately, many dyes (particularly the synthetics) have the potential to cause adverse effects in humans. Thus, the aim of this review is to evaluate the potential toxicological, mutagenic and allergic effects of the dyes amaranth, erythrosine B and tartrazine. For the production of this review, the authors performed a search of scientific articles in the PubMed database using the descriptors "Amaranth", "Erythrosine B" and "Tartrazine" associated separately with "Toxicity" "Mutagenicity" and "Allergic”. We included articles published since 2010 to assess the toxic, mutagenic or allergic potential of the dyes investigated in this review. With the above descriptors were identified 300 articles. After inclusion and exclusion criteria, 12 articles were selected to support this review. In selected studies, it was observed that the three dyes in general, induce DNA damage, cause changes in cell behavior and affect the body's metabolism from guinea pigs (mainly enzymatic activity, hepatic functions and the levels of plasma proteins). Given the exposed in this review, it is essential that the interactions of dyes with humans are better studied, as well as the application and the legalization of these substances for use in food occur with greater caution. | pt_BR |
dc.description.resumo | O uso dos corantes alimentícios, para fins industriais, disseminou-se nas últimas décadas. Seu uso tem diversos objetivos, desde uma melhora na aparência dos alimentos processados, até alterações no prazo de validade dos mesmos. Infelizmente, muitos destes corantes (em especial os sintéticos) possuem potencial para causar efeitos adversos aos seres humanos. Diante disso, o objetivo desta revisão é avaliar o potencial toxicológico, mutagênico e alergênico dos corantes amaranto, eritrosina B e tartrazina. Foi realizada uma revisão sistemática com busca de artigos científicos na base de dados PubMed utilizando dos seguintes descritores “Amaranth”, "Erythrosine B”, “Tartrazine”, associados, separadamente, com “Toxicity”, “Mutagenicity” e “Allergic”. Foram incluídos artigos publicados desde 2010 que avaliaram o potencial tóxico, mutagênico ou alergênico dos corantes investigados nesta revisão. Com os descritores supracitados, foram identificados 300 artigos. Após critérios de inclusão e exclusão, 12 artigos foram selecionados para fundamentar a presente revisão. Nos estudos selecionados observou-se que os três corantes, de modo geral, induzem danos no DNA, provocam mudanças no comportamento celular e afetam o metabolismo corporal de cobaias (principalmente as funções enzimáticas, hepáticas e concentrações de proteínas plasmáticas). Dado o exposto nessa revisão é imprescindível que as interações dos corantes com os seres humanos sejam melhores estudadas, além de que a aplicação e a legalização destas substâncias para uso em alimentos ocorra com maior cautela. | pt_BR |
