Características de carcaças e composição tecidual de cortes de cordeiros alimentados com resíduos da bananicultura

Abstract

The objective of this research was to evaluate the inclusion of banana crop residues on the carcass characteristics and tissue composition of sheep meat cuts. There were dissected the hams, loins and palettes of 25 lambs, males, not castrated, of Santa Inês breed, randomly distributed in a completely randomized design with five treatments and five repetitions. The experimental diets consisted of the inclusion of 20 or 40% of the hay leaf and banana pseudostem, besides of the control treatment with 40% of hay of cyndon, being all the treatments contained 60% of the concentrate. The variables analyzed were: live weight with and without fasting, body length, thoracic perimeter height of the anterior and posterior, hot and cold carcass weight, carcass yield, carcass depth, rump width, hind perimeter, internal length of the carcass, fat thickness, relative and absolute yields of retail cuts, the tissue composition of the ham, shoulder and loin and leg muscularity. The treatments containing 20 and 40% of hay of banana pseudostem influenced the live weight without fasting, live weight with fasting, body length, hot and cold carcass weight. The objective measures taken in the carcass and the retail cuts were not affected by experimental treatments, as well as the tissue composition. However, the overall weight, the weight of muscles and fat weight of the ham palette suffered influenced by treatments containing the subproducts of the banana crop. The results indicate that the subproducts of banana crop have evaluated potential of the use in roughage supplementation of sheep, being that the hay of banana pseudostem provided greater development of the animals and higher carcass weight of them.
