A aculturação alimentar do consumidor sírio: uma abordagem evolucionista

Em razão da guerra eclodida na Síria em 2011, surgiu um crescente fluxo de migração de refugiados sírios para o Brasil. Sob a perspectiva da Psicologia Evolucionista, este trabalho investigou o consumo alimentar de aculturação dos sírios que se refugiaram em Belo Horizonte, capital de Minas Gerais. Para identificar comportamentos de consumo recorrentes durante o processo de aculturação de imigrantes, foi realizada uma revisão sistemática de trabalhos sobre o consumo de aculturação publicados entre 2014 e 2018. Os resultados desse primeiro esforço apontaram uma concentração de interesses no tema consumo alimentar, o que definiu o foco deste trabalho. A partir dos resultados dessa revisão, três categorias de alimentos foram identificadas: comida da origem, comida do destino e Comida Global. As descrições de consumo dessas categorias foram analisadas pela técnica de Engenharia reversa, o que resultou no levantamento de hipóteses sobre as motivações evolutivas que orientam esse consumo. Para dar suporte a essas hipóteses, foi realizada uma pesquisa empírica com um grupo de sírios refugiados em Belo Horizonte. Para investigar as motivações que orientam o consumo das categorias identificadas na revisão, utilizou-se a técnica de laddering. À técnica de laddering, foi adicionado o nível de motivações evolutivas. Verificou-se que o consumo alimentar dos sírios é orientado por objetivos finais relacionados a afiliação, medo, nojo, conforto, cuidado familiar e curiosidade. O trabalho empírico corroborou algumas das hipóteses levantadas na revisão. O trabalho contribui para construir um diálogo entre temas sobre a aculturação do consumidor e a Psicologia Evolucionista. Além disso, ele oferece a proposta de uma inovação metodológico para o uso da metodologia de laddering como uma possível técnica para investigar motivações evolutivas.
Abstract
Because of the Syrian war that has begun in 2011, a growing immigration flux to Brazil has started. By addressing an Evolutionary Psychology perspective, this work investigated the food consumption of Syrian refugees living in Belo Horizonte, capital of Minas Gerais. In order to identify common consumption behaviors that take place in immigrants’ acculturation process, a systematic review of studies that have approached the acculturation consumption theme
published between 2014 and 2018 was conducted. The results of this first effort pointed to a concentration of interests regarding food consumption, which defined the focus of this work. Three food categories were identified: food from the home country, food from the host country and global food. The descriptions of behaviors related to the consumption of these categories were analyzed by the reverse engineering method. The analyses resulted in hypotheses regarding the evolutionary motives that might drive this kind of consumption. To support these
hypotheses, an empirical research was conducted with a group of Syrian refugees living in Belo Horizonte. Aiming to investigate the motives that drive the consumption of the categories identified in the systematic review, this work used the laddering technique. A new level corresponding to the evolutionary motives was added to the structure of laddering. It was found that Syrians food consumption is driven by final aims related to affiliation, fear, disgust, comfort, nurture and curiosity. The empirical work supported some of the hypotheses proposed by the systematic review. The main contributions of this work resides in proposing a dialog between consumers acculturation and evolutionary themes, besides of proposing the use of the laddering technique to investigate evolutionary motives.
