| Abstract: | Na literatura são encontrados diversos estudos sobre o processo produtivo do pão, principalmente com relação às suas características físicas. Algumas condições de produção podem alterar estas características, como a qualidade do trigo, do fermento, entre outras. O objetivo deste trabalho foi analisar a variação de volume da massa, na etapa de levedação do pão, por meio da ação de dois tipos de fermentos biológicos (fresco e seco) empregando modelagem matemática. Os resultados obtidos indicam que o processo pode ser modelado matematicamente empregando-se o modelo de Verhulst conforme sugerido pela literatura. Os resultados obtidos apontam valores distintos para os coeficientes empíricos deste modelo (k=85,562 cm³ e α=0,0836 min-1 para as amostras com fermento fresco e k=88,481 cm³ e α=0,0328 min-1 com fermento seco). |
| Abstract: | Because of the great importance of bread as food product, several studies are found on the subject, especially related to their physical characteristics. Some production conditions can change these characteristics, the quality of wheat, yeast, and others. The object of this study has been to analyze the mass of the volume grown of the bread through the action of two types of biological yeast (fresh and dry). For this, experimental and mathematical modeling routines were employed. The results indicate that the process can be described mathematically using the Verhulst model suggested in the literature. |
