| Abstract: | Este artigo busca situar a cena gastronômica das quatro cidades brasileiras que levam o título na UNESCO (Florianópolis, Belém, Paraty e Belo Horizonte) e, sobretudo, descrever as ações utilizadas para mitigar os efeitos da pandemia sobre a atividade. Por meio de entrevistas com gestores e empreendedores da área, buscou-se entender como se configura a governança estratégica da chancela e sua representação para a cidade, especialmente enquanto ponto de articulação para certos setores. Os principais resultados evidenciam que há uma percepção de gestores e empreendedores entrevistados bem favorável a efeitos da titulação. | Abstract: | This article seeks to situate the gastronomic scene of the four Brazilian cities that have the title by UNESCO (Florianópolis, Belém, Paraty and Belo Horizonte) and, mainly, describe the actions used to mitigate the effects of the pandemic on the activity. Through interviews with managers and entrepreneurs in the field, we sought to understand how the label’s strategic governance and its representation for the city is configured, especially as a point of articulation for certain sectors. The main results show that there is a very favorable perception from managers and entrepreneurs interviewed regarding the effects of the seal. However, the lack of indicators to monitor such benefits is one of the missing points in the strategic organization of the title |
