Saberes nos sabores da memória: desvelando geografias nas receitas

Abstract

The present text is proposed as a space to think about food recipes and their relationship with geographic knowledge/doing, especially in the tracks opened by the studies of flavor in humanist geography. Hence, we understand this piece as a text of exploration and possibilities for unfolding geographic thinking based on the study of Brazilian food recipes and food traditions. We understand recipes as scriptures influenced by the strength of places, agriculture, land cultivation by men and women, and, in the contemporary world, the marks of globalization and the daily lives of cities. To do so, we try to discuss the recipes from the preservation and cultural transmission perspectives, the ways of making and their relationship with the people’s ways of being and living, and the construction of landscapes from the utensils and ingredients that make up the recipes. For this work, we rely on studies by geographers, anthropologists, gastronomes, journalists and historians, on the relationships between food, knowledge, experience, culture, and imagination.
